If you can't find something online or in your local market, you probably shouldn't be playing with fire anyway.. Finally, the direct flame is for searing. This is an excellent technique. Have you never been in a professional kitchen that serves steaks? Their stoves put out a little more heat than your mom's Kenmore/Whirlpool/GE.
good points but damn im going to try this with my lil smokey joe and chimney starter. never thought to sear steaks straignt on the chimney (way hotter than coals on the smokey joe), then finish steaks off after pouring the coals on the smokey joe. ingenius
