蔥油 材料 /
蔥白6-8根、紅蔥10粒、洋蔥1/2粒、油500 cc
蒸魚 材料 /
圓鱈 1塊、蔥絲適量、薑1塊、辣椒絲少許、香菜少許、酒1大匙、蒸魚醬油3大匙
乾拌麵 材料/
油麵300g、豆芽菜100g、蝦8隻、韭菜3根、醬油膏適量、胡椒粉適量、味醂適量
做法 /
1、洋蔥切大丁、紅蔥切片,放入油中熬煮,煮滾後放入蔥白切段,熬至金黃色,即成蔥油。
2、薑切條狀,鱈魚淋上酒,備用。
3、平底鍋空鍋加熱,放入薑,再放上鱈魚,延鍋邊淋上5大匙水,蓋上鍋蓋煮6分鐘後取出。
4、鱈魚加上蔥絲、辣椒絲、香菜,淋上蔥油、盤邊淋上蒸魚醬油。
5、水煮滾放入油麵、草蝦、豆芽菜、蓋上鍋蓋悶煮至滾後撈出,拌入蔥油、醬油膏、味醂,擺上韭菜,灑上胡椒粉即可。

蒸魚醬油製作方式:水150cc + 醬油20cc (或泰式魚露5cc) 煮滾,即成蒸魚醬油。
