Do these sets have the same resolution as one from the 60's or 70's, aside from the edges being cut off? It looks pretty sharp.

LOL - I was wondering when you'd notice. Yes, I'm in Chicago.
If you can solder, you cap recap. I think the tricky part is knowing what parts to use and where to get them. These old sets usually use 400-1200 volt caps. The material matters too - ceramic, mica, polyester, etc.
I suppose I could help you out some weekend if you're really serious.

The aspect ratio is 4:3 which is little tough when using a circular tube. Some sets like the Zenith portholes stretch the picture out to use the entire CRT surface. If you do that, you loose the corners though.
Others use a rectangular mask and sacrifice some of the available CRT face.
This set is a compromise where they left the sides round, but masked the top and bottom. So, yes, you do loose a little in the corners.

Short answer - yes.
Long answer - The old NTSC broadcast standard is 262 1/2 lines interlaced for 525 total. Only about 486 hold video info. The horizontal resolution is analog so limited be the bandwidth of the video signal.
