The ingredients are 600g of lotus seeds, 560g sugar,500g groundnut oil, 11/4 tbs alkaline water, 2tbs maltose, 1tbs condense milk, 1/2tsp salt, 4tbs sugar for caramel. Mix lotus seeds with alkaline water and 3 tbs of water, rest for 20mins. Then pour in the hot boiling water and cover it for 30mins. Wash away the lotus seed skin, then add water to boil the lotus until soft. Blend the lotus seed until very fine. Heat the wok and fry the 4 tbs of sugar with some oil till sugar turns caramel in colour. Pour in blended lotus seeds, sugar, oil, salt and fry till water dries up. Add in maltose, milk and mix well.   • @dexxl Haha.. ya is really hard work. I spent quite sometime just to remove all the skin, but this lotus paste taste really good. :)
