We have been to sushi restaurants from Maui to Madrid (and yes, Aspen too), and this place re-establishes itself as #1 every time we eat here. Why? freshness, consistency, quality, purple haze sake, and the magic hand of Hide-san! He starts with a whole fish, puts it through his special curing process, and then cuts the fish in such a way to produce the best nigiri / sashimi sushi you have ever had . . . melts in your mouth!
