push down and twist clockwise til locked about 1/3 turn

THEN pull handle and push it down. You had the handle down so the probe was pushing the relase ball on the keg and beer was flying everywhere.

It's not like the whole keg emptied, probably lost less than the first few foamy glasses when the intial presure was released. It's a beer party not a wine soiree
