Instead of cooking the goo directly on the heat, use a double boiler. This way you won't get any burned bits and might be able to get to a higher temperature.

@EshBeanie Hiya, presume so, I think they both do pretty much the same thing, the arrowroot I used because it has more of a 'taste', original marshmallows used to use mallow roots as an ingredient.

LOVE THIS <3 Been vegetarian my whole life, and I feel marshmallows are something I miss out on, they look so good O.o I haven't actually made them yet..I don't know where to get arrowroot or xanthum gum...can you buy them anywhere in UK or do I have to order them online? thanks!!

@ToxicShrimpify Hiya. I felt the same way, hence the dabbling! lol... I got arrowroot from the 'home baking' isle and xanthum gum from the 'free from' isle in tesco, so not really that hard to get hold off! :-)

I am vegan so would egg replacer work in this recipe????? I have never used egg replacer so I am unsure.

btw which isle would the xanthan gum and arrowroot powder be in tesco? are they both in the 'home baking' section? xxxx

@Alaurahpinder1990 xantham gum is in the 'freeform' isle, where you can get gluten free stuff from, it's used to make gluten free bread more elastic. The Arrowroot was from the Baking isle I think. Let me know how you get on! Hope you have a lovely hot-chocolately-xmas! x
