As pleasant as it is to think of this Cantabile as Chopin's 'real' Minute Waltz, and as common as it is to find performances that seem to strive for that 60-second duration, I think your slower tempo gives each phrase exactly time to induce its manifold 'musical meanings' in the listener's head and heart, exactly enough time for the listener to realize those meanings before the next phrase begins. your hands denote a really talented pianist, im really happy for you and you should be very proud, im just retaking practice little by little, since i have no teacher im learning kinda slow, but it doesnt matter, because eventualy i will reach my goal, i really hope for my hands to be as experienced as yours.
