  • I am making this tomarrow. I have the roast I have all but the wine. But I can still make it? You are so very right about the rice. The peas well that is what I have and what I buy. This is great. Hope you do not mind I do not use the wine. Thank You and have a good day.

  • @Betty1Q You can make it without But the dry red wine adds body & richness. Use 2 cans soup instead of if you omit the wine

    Ha! Yeah, y'all know it, but you keep the good stuff secret. Can't get Camellias at Publix, or Krogers, or Winn Dixie. Nope. Us outsiders never even know they exist. Took me 67 damn years to find out what a real bean tastes like, and I had to sneak into Cajun land and mail order 'em. LOL

    Made another batch of Crowders today, w/ bacon, Holy Trinity, a good dusting of Slap Ya Mama, cooked per the bag. Same reaction. I've NEVER had Crowders that tasted this good. Ever! BOY!

  • @anmoose Uh Huh, JB or ANYONE from Cajun land knows what good & what sucks. Them blackeyes & crowders are great with PLENTY of smoked bacon. And of course a heapin cup of Holy trinity too (Means with garlic) Beans & peas are very good for you also

    Glad to help. I've been hanging with JB for a long time. He's a great guy and a lot of fun. Just don't tell him or he'll get a swelled head. LOL

    I'm an experienced cook, and I've learned a lot from him, especially about Cajun cooking. He even reminds me sometimes of tips I knew years ago and forgot about. If you want to learn, this is a good place to do it. Hang on and enjoy the ride.
