How do you make the camera pan sideways, like the beginning of the video? And how do you make the building options disappear at the side of the screen?

if you press ctrl-shift-0 you get a option to make a flying route camera. and in the game itself there is an option to record you coasters. if you press ctrl-shift-f11 he wil start to film. then the game will run vey slow that means he is recording.
