  • LOL !! Beautiful crumb structure? Gorgeous pockets? LOL!! G-d bless you 'ol man for an entertaining video. Why in the world is everyone so goshdarn afraid about kneading bread? Y'all make it sound like your working concrete! You started kneading it, then you stopped. Keep your hands/bread/board with enough flour to keep from sticking, and you'll eliminate those huge gas pockets. You will then have a nice texture to your bread surface. SO? What's the problem??? Gorgeous crumbs? LOL

    Thats a great idea. I had wondered to myself if that might help create a better seal around the lid of my dutch oven.

  • @jkanavel it also helps if you do the second proof in a small bowl...i line a small mixing bowl with parchment paper and bake with the parchment as well it comes out awesome

    It was flat because there was too much surface area in the bottom of the pan. The smaller the dutch oven the better because the bread is forced to rise upward.

  • This video is ridiculous. The bread was completely flat, and looked sunken in the middle! You admit to not even watching Jim Lahey's video the whole way through! This is embarrassing. If you're going to claim to be a "gourmet chef" you should learn how to do something properly before trying to teach others. Shameful.

  • You had me for a few minutes and then you had to go and screw it up when you tossed the dough into the pot with no technique. Very amateur move man! You should've formed a ball, hence the name "miracle boule" What a mess !
