One of the guys mentioned how cooking can destroy nutrients. I agree, it can with certain foods, but to add to that, traditional preparation technieques, including cooking, can enhance nutrient availability of other foods. Complicfated subject. Recomend a book called nourishing traditions. It mas many traditional raw food preparation technieques as well telling how to get the most nourishment from the food.
