Yields: 6 to 8servings

Ingredients:
1 tbsp. olive oil
1 bag Angel Hair Cole Slaw Mix
1 (14.5oz.) can bean sprouts, drained
½ cup water chestnuts, chopped
¼ cup green onion, chopped
1 tsp. minced garlic
1 cups cooked chicken, finely chopped
4 tsp. cornstarch
1 tbsp. water
1 tbsp. soy sauce
1 tsp. vegetable oil
1 tsp. brown sugar
¼ tsp. cayenne pepper
Egg Roll Wrappers

Preparation Directions:
~ Heat oil in a large skillet, add Cole slaw mix, bean sprouts, water chestnuts, green onions, and garlic. Cook and stir over medium heat until vegetables are crisp-tender, about 3 minutes. Add chicken and heat thoroughly. In a small bowl combine cornstarch, water, soy sauce, vegetable oil, brown sugar and cayenne until smooth; stir into chicken mixture. Bring to a boil. Cook and stir 2 minutes; remove from heat.
~ Spoon ¼ cup of the chicken mixture on the bottom third of one egg roll wrapper; fold sides toward center and roll tightly. Place seam side down on a baking sheet that has been sprayed with cooking spray. Repeat with remaining wrappers. Spray tops of egg rolls with cooking spray.
~ Bake at 425 degrees for 10 to 15 minutes or until lightly browed.

  • This was a great video. I loved your enthusiasm and great tips. Not everyone has an adult who takes the time to walk us through. Especially when this is not the kind of food we are used to. Great turn of frying. I also don't know what to do with the oil. Hardly use the stuff anyway.

  • Not once did you look at the camera. Also, you didn't say approximately how long to bake them. Why is it that when most people make these videos, they always have crummy music playing in the background?
