My Best Fried Chicken Recipe For Dutch Oven Cooking...

HUMBOLDT COUNTY FRIED CHICKEN

Dry Mix Ingredients

• 1 cup all-purpose flour

• 1 cup bread crumbs

• 1/4 cup paprika

• 1/4 cup sage

• 2 tbsp. pepper

• 2 tbsp. salt

• 1 1/2 tbsp. garlic powder

• 1 tbsp. ground mustard

• 1 tbsp. thyme

• 1 tsp. ground ginger

• 1 tsp. ground oregano

• 2 tbsp. Italian seasoning (Optional)


Wet Ingredients

• 4 beaten eggs

• 1 qt. buttermilk

• 12 large chicken thighs with skin on


Gravy

• Drippings

• All-purpose flour

• Water



Directions

Mix together dry ingredients and divide into two equal parts (Save one for later if possible)
Mix together beaten eggs and buttermilk in large bowl
Soak chicken thighs in wet mixture for one hour
Place one part of dry mixture in a shallow dish or zip-lock bag
Coat chicken thighs one piece at a time in dry mixture
Place one entire chimney of briquettes under 16 dutch oven
Place 1/2 olive oil in dutch oven and brown chicken on both sides in hot oil
Remove chicken from dutch oven and drain oil from oven
Place large trivet in bottom of dutch oven and return chicken to dutch oven
Bake for one hour using one ring of coals under the oven and two rings of coals on the lid
Remove chicken and trivet to make gravy
Mix 1/2 cup flour with 1 cup water and stir into drippings using left over coals to simmer
As gravy thickens continue stirring and add additional water or water and flour as needed.

Save leftover seasoning & gravy... Makes great fixings for chicken fried steak.

  • this looks fantastic are you saving the left over seasoning for the gravy or for a later use like chicken fried steak? Have you done any videos about your portable cooking outfit and could you show its set up? thanks GWNDFM

    The left over seasoning (that has not had poultry rolled in it) is saved. We use a variety of cooking surfaces--I tend to be a minimalist and cook on whatever surface is available while Dean likes the table. His table is a wonderful one, custom made and very HEAVY. We tend to use it where we will be staying awhile or having multiple cooks. If you go to the " Pizza Fun at Ocean Cove" and scroll down the comments, you'll find info on the set-up shown in this Chicken video. Joanie

  • Our family really gets a kick out of you're videos, highly appreciated. People such as yourselves are the folks that should be hosting you're own cooking show, not these scary Paula Deans and Martha Stewarts types.But,real people making REALLY good food.

  • i finally took the plunge and got rid of all my scratched up toxic non stick skillets and invested in some cast iron cookware seasoned it well never washedit in soap and it is the best investment i ever made plus i'll never have to replace i and i can pass them on to my grand kids yes they are heavy but oh so worth it my little ole 100 pound grandma used them all her life so i guess i can to
