Well, obviously her reasons for not eating meat are based on taste. Either that or she's reevaluated her philosophy at some point. Anyways, she came there knowing she would challenge herself to give it a try. Instead of criticizing her, how about supporting her concept of self-discovery and trying something new for a change? Yes, yes, I love me some meat.
