Would you like to learn how to cook fresh green beans?

Chef Jason Hill prepares a fresh green bean recipe that's lightly sauteed and seasoned with garlic and shallots. It's a great way to sneak some greens into your daily meals.

To begin cooking fresh green beans, first wash and pat try, then remove the tough stem ends.

Next, in a pot, add 1/4 cup sea salt to 6 cups of rapidly boiling water.

Blanch the green beans for about 5 minutes, covered. Next blanch the green beans in a bowl of ice water. This stops the cooking process and keeps the green beans bright green and really colorful for the plate. Set aside until you are ready to saute.

While the green beans are chilling in the ice bath, get the rest of your ingredients together.

For each small bunch of fresh green beans you'll need
1 teaspoon garlic-shallot puree (or 1 crushed clove of garlic)
1 tablespoon butter
1/8 cup sherry wine
1 tablespoon olive oil
Salt and fresh cracked pepper

Preheat your pan and add the olive oil, followed by the butter. Melt down. Add strained green beans and the garlic puree. After about 3 minutes, stir in the sherry wine and let that cook down another 2 minutes. Finally, add fresh cracked sea salt and ground pepper to taste.

Transfer the fried green beans to a serving dish.

When cooking green beans, don't overcook. There's nothing worse than a mushy green bean. You want 5 minutes in the water and 5 minutes in the saute pan max. That way they'll still be firm to the tooth. Enjoy!

    Hello. I have not tried that. I think Vinegar may be a bit harsh for this.

    i didnt have any chery so i ad some chianty wine and a litle bit of lemon peel. love the little citrus flavor

  • I did not have a shallot or sherry so I made it without the sherry and replaced the shallot with a small portion of a yellow onion and it was delicious. Legally those green stringy things that you buy in a can at the store should not be allowed to be called green beans after tasting this.

  • I'm only 14 and cant get any of the alcohol so all i used was the garlic , salt and pepper and the were absolutely beautiful to eat ,,, !! xx :D
