  • They might be old, dead beans - or perhaps you didn't rinse them often enough?

  • Yes, you can use brown or Du Puy lentils (but not red lentils, which usually don't have their hull).

    If they don't sprout easily, it's probably a problem of quality - try to find organic lentils from a supplier with a good turnover - they become less viable with age.

  • Rinsing means exactly as you said - fill with water, pour out again and leave upside down
