These are not unlock-able levels. They can be downloaded as DLC content, or The Force Unleashed 1 had a re-release of the game adding three levels to the game. The Jedi Temple level, Tatooine level and the Hoth Level.

Well although the game alternate reality level cannot fully capture it; Luke embraces the full power of the Dark side within himself of hidden rage for the loss of his father, and to interact with the man who killed his father (regardless of Obi-wan's "point of view" of Anakin's downfall) makes Luke completely enraged and thinking nothing else matters, but to kill Starkiller. Then during the dual act 2 of the dual Luke becomes overconfident, hence pride comes before the fall.

In the Force Unleashed 2 DLC there is alternate reality where the apprentice arrives on Endor. However it does not follow the idea of Luke becoming Starkiller's pupil. Instead Luke is said to have been killed or "fallen" and you fight the Rebel's before they can destroy the shield generator. Not to mention it follows the ending of the Force Unleashed 2 of the dark side, so Vader is alive, but uses a clone of Starkiller to destroy the Rebels. It's quite a mess.

What happens after this? Is there more Gameplay or does it end here. that's all ive seen on YouTube so far is this same thing over and over again.
