Mom got this recipe out of her Taste of Home magazine. It was nicely typed up on their site here:

Ingredients 4 bacon strips, diced 1/2 cup chopped onion 8 cups fresh green beans, trimmed 1/4 teaspoon salt 1/8 teaspoon pepper

Directions In a large skillet, cook bacon and onion over medium heat until bacon is crisp and onion is tender. Meanwhile, place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain well. Add to bacon mixture. Sprinkle with salt and pepper; toss to coat. Yield: 8 servings.

I just heard mom talking to my auntie and she said she thinks that there was not enough bacon fat to make this dish work. Since we tend to buy center cut bacon, as it has less fat, we will go ahead and suggest that you use a different cut of bacon to render more fat in the dish. Enjoy!

  • my attention was diverted by the above comment about "jew bacon". at first i thought it was some ignorant, archaic southern speak, but now i am thinking that the writer means kosher bacon made from beef or lamb.

  • I'm with you Beth! I don't prefer green beans. When my grandma made them she used salted pork chunks and pearl onions! TFS anyways! Granny always makes me smile.

  • @CookingAndCrafting You can use Splenda instead of regular sugar. Mom is diabetic too. Its just something you have once in a while. Due to my recent doc visit. I have been doing away all things sweet too. Even though I'm not diabetic. Just trying to keep it that way. But all and all they are pretty good.
