  • Nice video. Rough puff is my favorite pastry to make. I find, despite the time spent waiting for it to chill, the actual procedures are quite simple and not too labor intensive.

    Question: When I make this I do the folding, turning, rolling like at least twice before resting, and when my pastry is done I've done so much rolling and layering between resting that you can no longer see the butter.  I noticed however that your pastry is flecked with pieces of butter. Is this preferable?

  • wooooooooooooow, is that the same puff pastry that you worked with at the end because it's massive, i dont know if thats just because it's risen well, but it is insanly large. looks yummy though mmmmmmmm!
