1. It is extremely expensive to develop an application like Business One for the Mac OS
2. It is already possible for any company running Macs to use it
3. This application is targeted to small and midsize companies with 3-200 users and $1M - $150M in revenue. The vast, vast majority of those companies run Windows computers

You will see more applications designed to run in virtual environments and deployed to users independent of the user's OS.

Why not just build it native for mac and capture the nascent business market? Windows looks like a poor poor cousin to osx.
