Traditional French Honey Cake

2 ½ cups Flour
½ tsp Baking Soda
2 ½ tsp Baking Powder
1 heaping tsp Coriander
1 heaping tsp All Spice
1 tsp Cinnamon
1 tsp Ginger
4 Eggs Beaten
1 ¼ cup Sugar
½ Cup Oil
1 cup Honey

Preheat oven to 350 degrees. Grease and flour a round baking dish, set aside. Combine all ingredients until mixed well. Pour into pan and bake 40 50 min depending on altitude and type of pan used, check after 40 min. Can be served with frosting but is traditionally served plain.

Egg Substitute or Flax Eggs

1/3 cup milled flax seed
1 cup water

Mix thoroughly in a bowl and let sit. Once the mixture reaches egg like consistency, it is ready to use.

3 TBS = 1 Whole Egg

  • There is a egg replacement recipe in the side bar, I was out of Flax seed. You can use Aguave necter too.

  • Oh dear, use honey instead! Recently I read an article that agave nectar is not agave nectar at all but made from a pineapple shaped root and the process in which they convert the sugar turns into high fructose corn syrup (bleh!). I was shocked to find this out and disheartened too :(

    On a side note, can you use (organic) maple syrup in this recipe instead? I think I may be out of honey at the moment.

  • @RedDragon033195 there's an actual brand of egg replacer you can find at whole foods that i get. u use one tablespoon or something per egg in a recipe (u might need to add water though for consistency) :3

  • being vegan, what can you use instead of eggs? an can you use corn syrup instead of honey?
