It's because of that concern that I'm afraid of consuming this salad and instead opted for making cabbage rejuvelac. According to the recipe, it should take 3 days to make (first batch) and 24 hours for all subsequent. And all it contains is cabbage blended with spring water.
seems simliar to kimchee.. what are your thoughts on kimchee?

How long should the cabbage stay in the jar at room temperature?
You say the one jar was set up 1 week earlier, so I'm guessing it's at least a week.
(But prefer not to guess -- please let us know how many days.)

If I wash the cabbage in tap water before I make the salad, will that kill the natural probiotics on the cabbage?
