What do you do with 2 gorgeous salmon? Why, smoke them of course! I used the Alto-Shaam 767skIII and chilled the fish in the Alto-Shaam QC100 quick chiller before peeling the skin off and serving them.

Nice presentation! I just use sugar/salt in my brine then smoke it in a smoker oven. Thanks for a great video!

You should cut the skin off first before you smoke it .That way all the smoke flavor goes in the meat not just the skin and you throw it away.
