  • Wow....I don't care what you all say. That is all negative talk. But, that was pretty interesting and exactly how the professionals do it in Culinary school. :D

  • Score the skin, oil the skin only, no oil in pan and sear for 5 minutes. Do not move the fish. Only then add butter and flip. Turn off heat let fish sit in warm pan. The cook looks good, I admit.

  • what a hack. u need to score the flesh. that skin is no where near crisp.

  • it's better to preopare the broccoli oven roasted than pan roasted....heat up a cookie sheet in a 500 degree oven and throw your broccoli on it dressed with olive oil a little salt and a little sugar to get it to caramelize ... done before you know it
