@somepartsareme They record it with a special feature in the emulatior that saves the inputs, they save state, and when they only the inputs until the save state get in the movie, so it's like amking a movie, if the scene goes wrong they just do it again and the program "edits" the wrong part out, they also play tehe game frame by frame sometimes or at a slowed down pace.
