Golly, he's a bit of a waggler! As it was filmed in a studio with presumably no wind, the plant must be using up quite a bit of energy when it's flower opens.

@APurseyful You are right. There is no wind in my studio so all the movement is generated from the plant. I do have a grow-light so it's probably reacting to that as many plants need sunlight to stimulate them to open. It could be the same for this sanguisorba.
