What made you decide to go 4.3L rather than the 4.2L? I'm still debating whether to go with the 4.2L or 4.3L Stroker...
On another note, this may sound like a stupid question but will exhaust manifolds off of a 3.8L fit a 4.3L?

I didn't want to spend $900 on a manifold to make it work and I also didn't want to cut a hole in my hood to make it fit...

The only difference between a 4.2, 4.3 or 4.whatever is the bore size. With a larger displacement engine you will be able to more easily support more horsepower but will not see much of a performance gain between a 4.2 and a 4.3L engine. Yes the exhaust manifold will fit, the only difference between the 4.2 and the 3.8 is the rotating assembly, heads and all other external prats are the same.
