Here's an easy pumpkin soup, with some variety...
Ingredients:
1 Butternut pumpin
1 brown onion
3 Desiree potatoes
2 carrots
1 Kumara (or sweet potato)
and 1 garlic clove
1 vegetable stock cube
500 mL of liquid vegetable stock
Instructions:
Prepare the veges, chopping them according to your taste (chunky or finely) and washing them thoroughly (especially if you dropped a piece on the floor!). Fry the onion, garlic and carrot, over a moderate heat until the onion and garlic soften. Add the remaining chopped veges, and the stock and cook over a high flame until the soup starts to bubble. Reduce the heat to a simmer, and cook the veges until just soft. Check the seasoning. Mash the soup with a potato masher for a chunky soup, or blend in a food processor for a puree. This soup is best served chunky, as it is a thing of beauty with all the sunset coloured veges combining in the bowl. Serve with crusty bread, freshly chopped parsely and shallots and either thickened cream or sour cream.
Variations:
Add half a red capsicum to the initial "fry up"
Add a mix of pumpkin varieties
Add milk in the last phase for a creamier version
MUSIC: "Tras" off B EP by Battles released by Warp Records
Good god this looks delicious D: Will have to leave out the onions though, since my dad's allergic to 'em. D'you think I can use something else instead?
As far as I know, leek and spring onions don't give him stomach aches for the rest of the week like actual onions and those red onions do.

Spring onions would probably be ok... you might want to fry them up in some oil over a medium heat until they're soft, first.
I love the idea of people from around the world eating this dish! It warms my heart. ; )
