ya try to find a note that seems like it would be a root note, like its really easy for the blues. and for jazz you could use a major scale, minor scale, any really. its hard to explain but you just find a note that sounds "right" in the song to end a phrase on.. hope this helps

alright, but how would you figure out what key a song is in if you never hear the song?

@mindingosafado learn music theory and train your ear... to complicate matters, it's not rare for jazz songs to modulate keys, so whatever key the song starts out in is the key that musicians call out before playing a song, but they will not list out every modulation in that new key. if you want to play jazz, being able to transpose keys is a must-have skill.
