thanks so much for posting these!!! I loved Iron Chef when it was on TV, and would watch it all the time, and have missed it greatly (the U.S. version is unfortunately no substitute)

According to Sakai, each Challenger was require to name two of the Iron Chef's for to challenge. And only on the day would one of the two know that they were to be chosen. So this might have been a tactic to get an easy win, catching Sakai off guard.

Although it would be interesting to directly contrast his and Chen's styles, it is perhaps for that very reason he chose Iron Chef Sakai. After all, though the challenger arguably has more to gain from defeating an iron chef of similar background, he also has more to lose. He can justify a loss by stating that the judges preferred a different style of cooking. Also, while the iron chefs' reputations are solidified, the challengers stand to gain or lose more standing by a win or loss.

I think you might be right there.

"Dance with the flames"...!
sometimes, i agree. like when they pit a member of a rival school of cooking against the appropriate iron chef -- but in this case, i think it'll be cool to see the contrasts.

Awesome. Like and like would have been a little boring. Besides, there's probably a bit of comity/fraternity between chefs who do Chinese cuisine. French vs Chinese - 2 of the greatest cuisines of the world will be something to watch.
