Well, its the end of our D.C. episodes. This time, Remy takes on the popular Latin American dish ceviche, in which raw seafood is cooked merely by marinating in citrus juice. Since no heat actually touches the fish, the meat
remains uniquely firm and delicious. With the addition of spices and chunks of tomatoes and onions, the whole thing tastes like an incredible seafood salsa.

Of course, if you research it, youll find that the word
cooked is a fib. Citrus juice doesnt really cook anything, and, youre still eating raw fish. But thats what makes this dish so cool.

  • CEVICHE IS A PERUVIAN FOOD ( THE MOST IMPORTANT , I THINK ) YOU SHOULD VISIT PERU AND TRY THE REAL CEVICHE , WITH NATURAL LEMONS OF PERU AND MAYBE SOME SPICY , A HUG FROM LIMA - PERU REMY !
