You just need to keep going up to the end of the train, you will find newer seats. I always do.

How busy is this train normally (between Edinburgh and Inverness)?
How reliable/punctual is it?

Between Edinburgh and Perth it can be quite busy but it empties on its way north.
7 times out of 10 it will be on time, but coming from London it often meets delays. Of course when you get into the wilderness north of Perth with single track for most of the way, a late train going in the opposite direction will obviously cause delays.

Yes it is useful. Just one thing:
if you do not have a reservation, how difficult is it to get a seat at Edinburgh?

not that difficult, the busiest part of that train's journey is between London and Edinburgh as it hardly stops anywhere. It is not heavily reserved from Edinburgh to Inverness, usually coach B at the very front is the least busy as it is the quiet coach.
