Pork and Shrimp Steamed Dumplings ( Shiu Mai ) -- part 1 of 2 preparing the filling for the dumplings, authentic dim sum in your kitchen. More practice with the Chinese Cleaver, including double cleaver chopping for mincing veggies and meat!! Take out your aggressions on the mixture to get the right texture. Check out part 2 to see the finished product.

  • Don't forget to pound it in the mixing bowl, that blends the ingredients and gives the filling the right texture! Dip in soy sauce and enjoy.
