Just another scene of progress here. At this point , the spareribs have been in the smoking chamber for three hours. The temperature is right about 225 Fahrenheit.Maybe they'll be ready for the first in a series of repositioning during the next hourly inspection.
Wish you would have said exactly what the "target temp" was. Couldn't tell from the split second camera shot.
