  • Did you listen? He said he likes to taste a free range bird with no flavours added to it. Which would be your smokey bacon and stuffing. Personal preferance I say :-)

  • Let me say I love your channel. Now a question for you. I will cook a beautiful swan for Christmas table, but can the time in oven be same as the turkey? Thanks so much for help.

  • You add no stuffing? It should be done. We use a classic American style stuffing. Firstly to add a depth and richness to the flavour of the meat as well as to provide a good accompanyment. Also it is wise to cover the breats with strips of cured smokey bacon to seal in the flavour and help to keep it moist. Also If you create a tent of double foil then the it somehow cooks it better. This is how our turkey has been done for years. It is the classic approach and it works.
