1. Fully qualified domain name, a .com for the local domain? You are asking for trouble.
2. Fixed IP's, Ideally you should be running DHCP on the DNS server. It's easier to manage, and the DNS server will be able resolve records for internal UNC paths much better.
3, You are going to do a demonstration, know what you are doing, don't work it out on the hoof.

A lot of bad practices going on here.
