This is a homemade from scratch blueberry buttermilk pancake recipe! It has ground or milled flax seed that is optional which is a good source of fiber. Also the title is a play on OMG for O-Me-Ga as in Omega 3 (6 & 9) oils LOL!

INGREDIENTS
1 cup flour (For a healthier option, substitute 1/4 or 1/3 cup with wheat flour. Then, you'll need 3/4 or 2/3 cup of all-purpose flour with the additional wheat flour to make one cup.)
2 Tablespoons ground or milled flax seed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 egg, beaten
1 cup buttermilk
2 Tablespoons sugar
2 Tablespoons oil (or to cut the fat, use 2 Tablespoons unsweetened applesauce)
1/2 teaspoon vanilla extract
1/2 - 1 cup of fresh or frozen blueberries
Maple syrup

Combine the flour, ground or milled flax seed, baking powder, baking soda, salt, and cinnamon together in a medium mixing bowl. Sifting the dry ingredients is optional, but it helps to make your pancakes from scratch fluffier.

In another bowl, combine the egg, oil or applesauce, sugar and vanilla. Stir in buttermilk or buttermilk substitution made earlier. Make a well in the dry ingredients and add all of the wet ingredients to the dry ones. Fold until just combined because if you mix it until completely combined, the pancakes will turn out too tough. So the batter will be slightly lumpy.

Heat an oiled, non-stick frying pan or griddle over medium heat. (Starting with a hot pan or griddle will aid in fluffy pancakes too). For each pancake, use 1/4 cup amount of batter. Turn heat down to medium-low and sprinkle some of the blueberries throughout the pancakes. Cook pancakes until they are bubbly and edges begin to brown and then flip. DO NOT FLATTEN PANCAKES WITH SPATULA/TURNER. Serve the hot, golden brown pancakes with your favorite maple syrup. Enjoy!
