I learned this dish from my mom. What I've noticed about this dish is that it can vary from one trinidadian to the next, so i will give you a base recipe to expand upon.

This is a recipe for Trinidad stew chicken from "The Multicultural Cuisine Of Trinidad and Tobago and The Caribbean", a book published by Naparima Girls' High School in Trinidad. The chicken is marinated in green seasoning, and a few other ingredients.

Ingredients:

The marinade:
8 tbsp green seasoning
4 cloves of garlic
Plentiful black pepper

Chicken thighs and drumsticks, 4 of each
6 tbsp brown sugar
40 ml vegetable oil
Half an onion, sliced
Half a red pimento, finely diced
1 hot pepper, finely diced
6 mugs of chicken stock

Method:

Crush the garlic and black pepper together in a pestle and mortar. Add the green seasoning and pound to combine the flavours. Place into a small bowl and add the chicken. Mix thoroughly and leave for a couple of hours.

When you're ready to start, heat 20ml of the oil in a small pan and fry the onion, hot pepper and pimento for 4 to 5 minutes to get a lightly browned colour. Meanwhile, heat the rest of the oil in a large skillet and add the brown sugar, allow it to melt. Place the chicken (with plenty of the marinade included) in skin side down and leave to colour until golden brown. Turn the chicken over and allow the same on the other side. Now put the fried onion, hot pepper and pimento into the skillet with the chicken and add the stock. Leave to stew covered until the chicken is tender, it should take 20-25 minutes.

  • Thanks Jevon! My stepmother used to make a version of this that was very dark in color, rich in taste... similar to the flavor or jamaican oxtail. Any idea how I can modify the recipe to obtain a similar version?

  • @c13gladden brown sugar maybe? I used white in this video. or maybe she uses a dark soy sauce or worcestershire sauce

  • @JevonGotSkillz ok, I found out what chadon beni is and since I don't have that around here, I'll use cilantro. That website IS great! I'll try it and I can't wait. It does really remind me of sofrito (which I use frequently in spanish dishes). God bless!

  • @JevonGotSkillz thanks so much for sending this. It's ok if you just saw the post, we went to my mom's house and had peas and rice with stewed chicken! LOL So I'm gonna marinade the beef tonight and cook it tomorrow for after church. Thanks for the info. I'm looking around simplytrinicooking and I'll find the different recipes. What's funny is that I found this website last night looking for the ingredients in mauby. Thanks for the info!

  • @BronzevilleLady yeah it happens sometimes, it's just the nature of sugar and how it reacts to temperature changes, etc....no worries, it is cool.

  • @Nigel2dresq no problem =)

  • @blkcherrigurl tomatoes

  • @GREENBINGBONG , take that elsewhere friend because that sounds extra ignorant and was the worst joke I have ever had the displeasure of reading. Wasn't even worth the thought process needed to take offense to it. Simplistic at best. Have a good day and keep that to yourself in the future. Thanks.

  • @Bitchcow1 , yuh right yes. apologies =)
