There is no 'official' recipe for paella.
The ingredients you use my differ from the typical ones used in Valenca, but his one looks pretty good to me. I wouldn't mind eating it!
I am from Valencia and ate thousands of paellas, and yes, we sometimes mix chicken, rabbit and seafood. We call it paella 'mixta', usually at restaurants. At home we mostly make either one.

lay of the guy, it's true, this is far from a genuine one, but if at least the guy has taken the time to make one, film it and upload it. Share the knowledge, it's not like he's getting paid to do this!

Langoustine (this is not Dublin after all)? Seasoning pack? Dirty mussels? Holy crap, you have no idea about paella, Spain or any concept of food hygiene at all. Given the traffic noise we can only guess you are living on the side of the road somewhere, keep drinking the vino...it's what probably makes you think your crap ink, funny headband and sunnies are cool. Off to the bodega pal, grab a bucket of el cheapo...only after that will your cooked mess taste good!

Couldn't find the spice pack, but looked up what ws in it. I had to run out and buy saffron, otherwise I had everything.
Made it while watching you on a laptop by the stove....except I got through more of the wine than you did.
It was just great. Since then I've used the same basic recipe you show with just chicken and sausage and with just seafood. I also made one with leftover beef and peas. They were all good.
