Well, apparently its because of reflexes. Because the snake's head and spine is gone, no new signals can be transmitted to its muscles, but that's not stopping the reflexes from making it wriggle, as long as the nerve cells have oxygen. When that oxygen is spent, after a while, it'll stop. So the snake is dead, but its body keeps moving for a bit. Creepy.
