Hi, Zoe. I appreciate your wealth of knowledge and willingness to share. I understand that fats are identified as either having had a face or coming from something that had a face. My concen is with olive oil. Even though it never had a face, it's still a fat. How does the body prevent storage of fat from olive oil when it can appropriately be combined with carbs? Is it because it's a plant-based fat?

Hi there - this is where you need the book! You are quite right - the exceptions to the 'face' rule are vegetation oils - olive oil, sunflower oil, rapeseed oil, corn oil, avocado oil, coconut oil - all sorts of oils. In 400 pages, you have the opportunity to cover everything that you don't in a short video.
The book also explains how oils work with carb meals - you don't dip wholegrain bread in them, but you can stir fry veg in olive oil with brown rice
Hope this helps! Zoe
