Do you have an "administator" or only a "teacher" account? An admin can go to: Users->Accounts->Browse list of users, there he can find and edit user profiles (edit their names for example), thats the best sollution IMO.
Or you could simply ask your students to fill out their profiles on their own, if thats an possible sollution?

Are you able to zoom into the areas of the forms about which you are talking? This way we could read the text. or maybe use a general 1.5 zoom or just a font increase.
