I just bought these gamecube imports now actually(instead of back in the day when they came out) because it's easier to play them on a homebrewed wii.

Yeah, cause in the Japanese versions of Donkey Konga, the notes scroll by the hit marker only when you miss, so when I watch this video I see it and I know you're not missing, but it still looks like you are, so if I were playing I'd find it distracting.
As for Donkey Konga 3, I'm actually using my wii to play it. Which is a lot easier what with homebrew. I'm using the homebrew channel and any region changer to make it so my Wii reads original Japanese discs.

How come the notes aren't disappearing when you hit them correctly?

I'm not sure why that is. I saw other people's videos of the game, and their notes don't disappear either.

Yeah, I've been playing the Japanese Donkey Konga 2 and 3 recently and the notes disappear when I hit them correctly. Maybe it's just in the American version that they don't disappear? Which me thinks could be distracting.

oh you have DK 3? I really want to import that for my Gamecube. Do you have a special CD that lets you play imports? You find it distracting that the notes don't disappear? I guess I am just used to seeing them.
