A new Brine/Marinade for a Boneless Leg of Lamb I cooked up on the Brinkman Smokenpit BBQ here at Delphi Farms.
You will need:
1 Tbsp Jamaican Jerk from Knox Spice Co.
1/8 cup soy sauce
1/2 cup Salt
1 cup red wine vinegar
1 cup red cooking wine
1 8.5 oz can Filipino pineapple juice
If possible try to dissolve the salt in water before starting, and always make sure to rinse this off your meat before cooking to remove the extra salt flavor from the outside of the meat, this is different than your normal Marinade...

Combine ingredients add your meat, put in fridge for 2 hours flip meat stir mixture and let soak for 2 more hours.
Remove from bowl rinse and cook on the BBQ low and slow for 4-5 hours. You could cook in the crock pot on low until done.

  • If you like the hint of wine vinegar this is great... I would also recommend coating it with Knox Cracked Pepper or some sort of cracked pepper for the BBQ...
