Taiwan's cuisine is famed the world over for striking a delicate balance of presentation, aroma and flavor. The warp and weft of history have brought to this island people from a host of backgrounds, whose many distinctive dishes have created for the island a unique culinary culture.

Culinary techniques used on the island range from steaming, boiling, stir frying, deep frying, and pan frying to instant boiling, simmering, braising, roasting, gratiné and stewing. While rice and noodles are common staples, the preparation of chicken, duck, fish, pork, fruits and vegetables and snacks has been greatly enriched by a mélange of cultural and geographic factors. Today, Taiwan has no equal in the cornucopia found on both its banquet tables and at its snack booths.

Be tantalized by Taiwan's tasty treats as we explore the history, culture and people that have made the island a gourmet paradise.
