Yields: 8 servings
Ingredients:
2 large onions, cut into ½-inch wedges
3 ½ lb. Chuck Roast, cut into 1-inch cubes
¾ cup low sodium beef broth
¼ cup tomato paste
3 tbsp. balsamic vinegar
1 Food Club Beef Stew Seasoning mix
1 large butternut squash, peeled, seeded, and cut into 1-inch pieces
2 large Gala apples, cut into ½-inch wedges
1 loaf French bread
Preparation Directions:
~ Place onions in a slow cooker, add beef on top of onions. In a bowl combine broth, tomato paste, vinegar, and sauce mix. Pour over beef. Cover
~ Cook on high for 3 hours. Stir in squash and cook an additional 1 hour. Add apples and cook for 30 more minutes or until squash is tender.
~ Serve stew with thick slices of French bread.
