A Short History of the American Stomach with Fred Kaufman.

Kaufman takes us on a raucous, witty and fact-filled exploration of America's complex and often bizarre relationship with food. From secret raw-milk covens in New York City to "gastroporn" addicts, Kaufman presents an irreverent take on all aspects of the foodie world.

A renowned chronicler of all things gastronomic, Kaufamn's infamous Harper's article, "Debbie Does Salad," which likened the Food Network's camera shots to pornography (he sat down and watched six hours of the network's programming with a porn industry veteran to get her thoughts), generated incredible buzz in the foodie world.

In his most recent article for The New York Times Sunday Magazine, Kaufman turned his subversive gaze on the world of pet food - and hit the "most e-mailed" list.

In his latest work, Kaufman uncovers Puritan anorexia and bulimia and sheds a completely new light on this issue, as does his subversive take on cookbooks and diet books, his explorations into genetically modified food, and the digestive underpinnings of American imperialism - The Commonwealth Club of California

Frederick Kaufman has written about American food culture and other subjects for Harper's Magazine, the New Yorker, Gourmet, Gastronomica, and the New York Times Magazine, among others. He's been a freelancer for years, and published over one-hundred magazine articles, along with three books (Author, A Short History of the American Stomach). He's a contributing editor at Harper's, and teaches at the City University of New York and CUNY's Graduate School of Journalism.

  • 2- SECOND GM FOOD is OWNED by corporation who even have the balls to claim they OWN the natural genepool they POLUTE! this outrage allows corporations to corner the market on life and food. Its completely unacceptable.

  • Universities and researchers are losing grant money because nobody wants to eat your frankenstein food, Mr. Kaufman. Nobody wants to buy it. First world countries have banned it, except for the USA. If you, and the evil assholes who pay you, continue down this path, what little is left of the food quality on this planet will be gone forever.

  • I agree with facts stated in the video.

    Genetic modification enables reduction in pesticides and fuel.

    I have nothing against organic foods: reduction in pesticides is still an ongoing issue and more research is needed to develop more eco-frendly methods of agriculture and reduction of man's footprint on the environment.

    Finally, the most important genetic modification of crop have been done using so called conventional breeding techniques: diploid grains have been transformed into hexaploids

  • how can a plant that produces toxins 24/7 for its entire life be safe? They don't even undergo long term, in depth, generational feeding studies. These are unique, which is why they can be patented...they are not the same as trait selection.

  • Nature is not a supernatural being that can be offended or appeased. Nature is the cold hard fact of the universe around us as we observe it. This desire to revert agricultural technology to the 1800's is short-sighted, ludicrous, and misled by luddites who seek to control people for their own respective causes.

  • enviroment and animals have dignity, not just humans...it makes sense growing food with nature not against her. Using pesticides and fertilizer because soil is dead. The farmer is not a slave of companies and banks but having a dead soil you are......take credits to buy technology until you loose your land because promises over profit blind farmers..every farmer is doing the same producing as much as possible to compensate decreasing market prices...more more supply, prices and nature decrease

  • Organic is the green choice because it uses no pesticides and does not consist of GM foods and is the safest to eat without radiation.

  • as long as we are experimenting with new technologies we are going to make mistakes, and we don't know when we are going to develop a global killer. it could happen with genetic research, or in the pursuit of "greener" energies or just faster cars. if we are destined to destroy ourselves let it atleast be in the name of feeding starving people.
