How To Have Fruit on a Low Carb and Anti-Candida Diet

There is no need to stay away from fruit on a low carb and anti-candida diet. There are many benefits that you can get from fermenting your fruit. The fermentation process digests the sugars and carbohydrates making them nearly sugar free. The fermented fruit will not taste sweet. It will have the flavour of the fruit without its sweetness. When making sauerkraut the vitamin C content is much greater than in a plain old cabbage. The Vitamin C is increased by the fermentation process. So there is a good chance that there may also be a greater vitamin content in fermented fruit.

If you are suffering from Candida Yeast this is probably the only way to eat fruit. Although I still suffer from symptoms of Candida, they have not gotten noticeably worse from eating this fermented fruit.

I also get severe binging urges when I eat fruit due to insulin resistance (including strawberries and other low sugar fruit). Eating the fermented fruit actually eliminates any sugar craving I may be having and satiates my hunger.

Here is my recipe:
1 pinapple
2 oranges
1 apple
1inch piece of grated ginger
1/4 cup of rapadura sugar
1/4 cup of whey
1 teaspoon of salt

I cut up the fruit into small pieces. I put the pieces in my jar and gently squished them to get them juicy. I put in the salt, whey and sugar and mixed everything together. I closed the jar up and let this sit (covered) at room temperature for 2 days. Transfer to the refrigerator after 2 days.

Note:
This is probably not a tasty recipe for most people. I have learned to love the taste of ginger. It spiciness makes the whole batch quite sour. However ginger is a great tonic for the liver and aids any tummy troubles. It is a great anti-inflammatory and and may inhibit cancer cells in the colon.

Since Candida yeast inhabit the colon, there may be some benefits of consuming ginger for candida.

This study shows how effective ginger is at inhibiting oral candida yeast and compares it to Nystatin drug.

  • If you put plain natural yogurt in a cloth or cheesecloth you will start to get water dripping. This water is whey. You can place the cloth with yogurt on a strainer over a bowl to collect all your whey. Let the yogurt sit like this for a few hours. After it has finished dripping, the yogurt will have a cream cheese texture. Use they whey to make your ferments or to preserve food.

  • Do you drain off the liquid before eating?

  • No, the liquid from the fruit would contain probiotics for healing the gut.

  • hey georgeous! in ur WATER kefir vid u mentioned they eat glucose an leave the fructose. Is this different for WHEY? does WHEY eat the fructose an glucose?? lov ur vid. : )

  • I was told to stay away from all sugar, dairy and honey and only get your sugars from fruits. Also I read you should mostly eat foods on the low and middle of the glycemic index. Some say also you should eat fruits 1-2 hours before or after a meal because it could potentially feed yeast. I followed all this and my acne that plagued me for years cleared up! Some diets are so strict where patients also stays away from carbs such as pasta and legumes.

  • But you don't want fermented foods if you are fighting candida.

  • This is a great tip!!! I found out that eating fruits was contributing to my bad acne...I have candida issues too :( I am gonna try this now since i have stop eating fruit.

  • Long time ago I suffered from candida for years and medication always failed. Low carb helped only shortterm. I freed myself in eating loads of food that will leave the body fast again, which cleanses the intestine. That food is FRUIT!!! (and greens)! Fresh and raw. I even eat bread sometimes. No symptoms anymore since 2003. Fruit is our natural staple food. Trust me. And forget shower gel (in case your skin is affected)...

  • Just to add: One could look at the research that went into the Specific Carb Diet, which actually allows honey. The diet is for more then just this type of gut flora problem but the main point is there.

    -all one has to do is do a modified Specific Carb diet, or if you want to remain 'low carb' that is fine, but add Pink Grapefruits.

    The only caution is that Grapefruits being so powerful will interfer with certain medications.

    and you can google the issues with that.

  • I wouldn't be afraid of eating fruit with the imbalances that are talked about. If you head over to most low carb forums, you will quickly see people time and time again struggling with some gut-flora imbalance, something they get over and keeps recurring. The reason is that when you starve 'sugar' you basically kill of a lot of candida but make the issue more difficult because it will always come back stronger. Xylitol which is basically a fruit sugar "kills" candida and bad bacteria.
