It was because the design of the plane didn't allow the pilot to see over the nose too easily. Sticking their head out the window or taxing in wide half circles helped them see where they were going.

A little question though, did you use Track IR or is the head movement done with a joystick hat?

Track IR. Bob2 supports Track IR in full 6 DOF. It is awesome. At Shockwave's site in the Bob2 General Section there is a sticky thread with video links. You can find other videos specifically showing TIR use in this game. Youtube doesn't allow url postings otherwise I'd link it here directly.
